The most well-known story is probably the one taken from the Shiva Purana. One day Goddess Parvati was at home on Mt.Kailash preparing for a bath. As she didn’t wish to be disturbed, she informed Nandi, her other half Shiva’s Bull, to guard the door and let no one pass.

Nandi consistently took his post, intending to bring out Parvati’s desires. However, when Shiva got home and naturally desired to come inside, Nandi needed to let him pass, being loyal first to Shiva. Parvati was mad at this small, but even more than this, at the fact that she had nobody as faithful to Herself as Nandi was to Shiva. So, taking the turmeric paste (for bathing) from her body and breathing life into it, she produced Ganesha, proclaiming him to be her own loyal child.
The next time Parvati wanted to bathe, she posted Ganesha on guard duty at the door. In due course, Shiva returned, only to find this strange boy informing him he could not enter his own home! Furious, Shiva ordered his army to destroy the boy, but they all failed.
This shocked Shiva. Seeing that this was no regular child, the normally tranquil Shiva decided he would need to combat him, and in his magnificent fury severed Ganesha’s head, eliminating him instantly. When Parvati found out of this, she was so enraged and insulted that she decided to damage the entire Creation. At her call, she mobilized all of her relentless multi-armed forms, the Yoginis developed from her body and threatened to ruin all. Lord Brahma, being the Creator, naturally had his problems with this, and pleaded that she reassess her drastic plan. She said she would, but just if two conditions were satisfied: one, that Ganesha be brought back to life, and 2, that he be forever worshipped prior to all the other gods.
Shiva, having cooled down by this time, consented to Parvati’s conditions. He sent Brahma out with orders to bring back the head of the very first creature he crosses that is lying with its head facing North. Brahma soon returned with the head of a strong and effective elephant, which Shiva placed onto Ganesha’s body. Breathing brand-new life into him, he proclaimed Ganesha to be his own boy also, and gave him the status of being foremost among the gods, and leader of all the ganas (classes of beings), Ganapati.
